Recipe of the Week: Jamaican Hard-dough Bread


Hard-dough Bread

2 cups all purpose flour                                                             2 oz butter
1 teaspoon active dry yeast (or yeast of your choice)                 1 cup water
2 teaspoons sugar, granulated                                                   1 teaspoon oil
½ teaspoon salt



Warm water between 95 degrees to 105 degrees. Sprinkle yeast in and 1 teaspoon sugar.
Stir and ensure sugar is dissolve, cover with warm towel and place in a warm area. Let stand for 10 minutes. It must be foamy on top, if not try the process again.

In a large bowl combine flour, remaining sugar, and salt.
Use a knife or finger tips to work butter into the mix until it looks like bread crumbs.
Add yeast mixture and form a dough.
On a floured board knead for 15 to 20 minutes. You may need to add more flour as you go along.
Place dough in a greased bowl. Cover with towel and place in a warm area.
Allow it to raise double the size for about 1 hour.
Grease loaf pan.
Remove dough from the bowl and punch it to let the air out and knead it again.
Shape it to fit into the loaf pan, Place in loaf pan and allow to sit for 40 minutes.
Preheat oven to 350 degrees. Bake for 30 to 40 minutes until golden brown.
Slice and serve. Goes well with Jerked chicken or Pork

NB: You may use the yeast of your preference and follow instruction.
